Vinification & Aging
› Vinification : ›▪ Double sorting : both mechanical, using the Tribaie degree of maturity, and manual ▪ Pre-fermentation maceration at 9°C for 7 days ▪ Alcoholic fermentation in thermoregulated stainless steel vats ▪ Post-fermentation maceration at 30°C for 15 days ▪ Malolactic fermentation in new barrels › Aging : ▪ In French oak for 12-14 months (70% new barrels, 30% one-wine barrels) ▪ Aging on wine lees for 6 months
